  • 300 g Brasmar Salmon
  • 500 ml light soy
  • White sesame seeds
  • 4 limes
  • Mustard sprouts
  • 2 zucchini
  • Coriander
  • Olive oil

INGREDIENTS

  • 300 g Brasmar Salmon
  • 500 ml light soy
  • White sesame seeds
  • 4 limes
  • Mustard sprouts
  • 2 zucchini
  • Coriander
  • Olive oil

PREPARATION

Cut the zucchini into sticks, chop the cilantro and add both to a bowl with olive oil, lemon juice and sesame seeds. Mix well, check the seasoning and let it thicken.

Mix light soy, lime juice and sesame seeds for the salmon marinade.

Cut the salmon into very thin slices and cook it on one side for one minute on medium-high heat in a non-stick frying pan. One side should be cooked and the other raw.
Plate the salmon with the cooked side down and drizzle with the soy, lime and sesame seed marinade.
Finish by plating the zucchini salad on top of the salmon carpaccio and adding micro mustard sprouts for a fresh and spicy touch.
