
Cod Puff Pastry
Folhado de Bacalhau
INGREDIENTS
- 1 un Brasmar Deep-Frozen Soaked Cod Loin
- 50 g green asparagus
- 30 g Portuguese cabbage
- 1 un red onion
- 1 un garlic clove
- Salt and pepper to taste
- 50 ml olive oil
- Sesame seeds to taste
- 150 g puff pastry
- Various colored peppers to taste
- Black olives to taste

INGREDIENTS
- 1 un Brasmar Deep-Frozen Soaked Cod Loin
- 50 g green asparagus
- 30 g Portuguese cabbage
- 1 un red onion
- 1 un garlic clove
- Salt and pepper to taste
- 50 ml olive oil
- Sesame seeds to taste
- 150 g puff pastry

PREPARATION

Defrost the cod loin, remove the central bone and set aside. Place a pan on the heat with a dash of olive oil, add the chopped garlic and let it splutter.

Add the onion cut into half moons and sauté. Add the finely chopped peppers and the chopped tomatoes and let cook.

Add the previously cut asparagus and mix. Add the chopped olives and season with salt and pepper.

Stretch the puff pastry and cut into four equal rectangles.

On a rectangle of dough, place the vegetable mixture, the cod fillet and cover with another rectangle. Repeat the process for the remaining dough.

Brush with egg or olive oil and sprinkle with sesame seeds.

Place in a preheated oven at 180ºC for approximately 15 minutes (until the dough is cooked).

Serve very hot.
